ABOUT OUR PIZZA

Centro, distinguishes itself with New York-style pizza prepared in coal-fired ovens. In fact, Centro boasts one of the few coal ovens operating in the Midwest today. The choice of coal, burning at 850 degrees, provides a different flavor, texture and look for the pizzas. Adorned with New York blisters, Centro pizzas feature only the freshest ingredients including hand-made mozzarella cheese and imported , specialty flour, San Marzano tomatoes flown in from the Big Apple. Centro’s menu extends to salads, pastas, sandwiches and other entrees. It’s “great food with an Italian influence.”

George Formaro, the artisan baker and co-owner of Centro, decided early on to accept no substitutes. Rather than giving in to the ease of a conventional or wood-burning oven, Formaro chose to construct two coal burning ovens. Coal achieves much hotter temperatures than its counterparts, reaching 800 to 1,000 degrees, and baking pizzas in three to five minutes. This intense heat brings out the mouth watering aromas and flavor of each ingredient while blazing New York blisters on the smoky crispy thin crust. The ovens, constructed from a special soft brick that tolerates high temperatures, accentuate the cosmopolitan décor and ambience of Centro.
