Jonathan Baker, Executive Chef
A native of Portland, OR, Jonathan gained diverse experience working for both small fine dining restaurant concepts as well as culinary work for global corporate campuses. After a move to Des Moines, he landed at Centro as a Sous Chef, quickly becoming an integral part of the restaurant’s day-to-day operations. In 2018, Jonathan was promoted to Executive Chef, cementing Centro's reputation as one of the top kitchens in Des Moines while injecting his own culinary creativity into the restaurant's seasonal dishes and special events.
George Formaro, Chef Partner
George Formaro is the accomplished restaurateur behind some of Des Moines’ most successful eateries – Centro, Django, Malo, South Union Bread Café, Gateway Market & Café and Zombie Burger + Drink Lab. He is also the founder of the first artisan bakery in Iowa, South Union Bakery, opened in 1996.
Raised in an Italian family on the city’s east side, Formaro knew the power of good food in strengthening bonds among family, friends and business associates. His education in the restaurant trade began in several of Des Moines’ well known restaurants as well as Des Moines Area Community College’s well-regarded culinary arts program.
